I received a bread machine for Christmas this past year and I was so excited when I got it because that meant I no longer had to spend 20 minutes kneading dough. I don’t mind doing doing it by hand because my arms definitely look better because of it but it’s a lot quicker and less messy.
So, I decided to try it out by making some pretzel bites. I have to say, for my first time making pretzels they turned out pretty good!
Dough ingredients :
1 C + 2 Tbsp of warm water
3 C All-purpose flour
2 Tbsp light brown sugar
1 1/2 Tsp active dry yeast
Coarse sea salt
Ingredients for water:
4 C water
1/4 C baking soda
Cheese sauce ingredients:
4 Tbsp vegan butter (I use Melt brand)
4 Tbsp all-purpose flour (any flour will do)
2 c vegan milk (I use unsweetened original almond milk. Do NOT use a sweetened vegan milk because it will change the taste of the cheese sauce in a bad way. I learned that the hard way.)
1 C vegan cheese (I used Go-Veggie cheddar.)
1/4 C Nutritional Yeast
Salt & pepper to taste
In your bread machine add warm water, flour, brown sugar, and yeast. Choose the dough setting and allow dough to mix and rise in the machine.
After your dough is finished remove from machine and roll onto a lightly floured surface into four 16 inch ropes.
Cut the rolls into 1 inch pieces and lightly roll into balls.
At this point, you can bring your water and baking soda to a boil in a large sauce pan. Once the water is boiling add about 4-5 pieces of dough at a time for around 10 seconds.
Once you remove the dough pieces put them onto a pan lined with parchment paper. Add coarse sea salt as soon as removed.
Preheat your oven to 425 degrees F. Cook your pretzels for about 10 minutes or until you get the desired brown color. If you skip the water and baking soda step you will not get the classic brown color.
While your pretzels are cooking you can take the time to make the cheese sauce.
For the cheese sauce you want to melt the butter in a medium sized sauce pan. After the butter has melted add the flour and whisk for about a minute. Slowly add your milk and continue whisking until your sauce starts to thicken. Then add your vegan cheese, nutritional yeat, salt and pepper. Add however much or little salt and pepper you like, I normally use a teaspoon of both.
Then you can melt two-three Tbsp of vegan butter and brush onto pretzels after you’ve taken them out of the oven and enjoy!
