Vegan breakfast bowl

Potatoes are one of my favorite things to eat for breakfast, lunch and dinner. It’s really cold and a little snowy here today,so I figured what’s better than a hearty breakfast bowl?

Ingredients:

Potatoes of any kind

2 Tbsp oil (whatever oil you prefer. I used vegetable oil because it helps get the potatoes really crispy)

2 Tbsp garlic powder

1 Tbsp paprika

1 Tsp oregano

1 Tsp basil

Dash of parsley

1 Tsp freshly cracked black pepper

2 Tbsp nutritional yeast

Vegan sour cream

Vegan sausage

Your favorite hot sauce (I used Valentina)

*Whatever toppings you enjoy

Instructions:

Preheat your oven to 450 F. Wash and cut your potatoes into bit size pieces.

In a bowl add your potatoes, oil and spices and mix. Lay the potatoes evenly Β on a baking sheet and bake for 30 minutes.

When the potatoes have 5 minutes left to cook go ahead and cook up some vegan sausage.

When everything is finished cooking mix the potatoes and sausage in a bowl and add a spoon full of sour cream and top with hot sauce! Enjoy!
