I don’t know if it’s just me but I love tofu scramble and tofu scramble sandwiches. They don’t take long to make and you can put whatever you want in them. This is my go to breakfast to make on the weekends whenever I don’t want to get to crazy with my dishes.
1 Tbsp of Olive Oil (Or whatever you prefer)
1 Tbsp Minced Garlic
1 Whole Green Onion
1 Handful Chopped Baby Spinach
1/2 Small Tomato
1/4 C of Red Onion
Half a brick of tofu (Squeeze out as much water as you can)
Vegan Butter (I use Earth Balance)
Bread (I use Sourdough)
Salt & Pepper to taste
1/2 Tbsp Paprika
1/2 Tbsp Basil
1 Tsp Old Bay Seasoning
2 Tbsp Nutritional Yeast
1 Tsp Turmeric
1 Tbsp Garlic Powder
1/2 Tbsp Dried Chives
Don’t forget to add your nutritional yeast!
Allow the red onion to cook for about 5-7 minutes on medium low heat with olive oil.
Add minced garlic and continue to cook for just a few minutes!
Add the tofu & spices and allow to cook for just a few minutes. Then add chopped spinach, tomato, and green onion.
Combine everything together!
Toast your favorite bread!
Warm up the olive oil and add red onion. Once the red onion becomes translucent go ahead and add the minced garlic. Saute for just a few minutes and add in the tofu and all of the spices.
While the tofu is soaking up all the flavors of the spices start toasting your bread.
Once all the spices are combined with the tofu, add tomato, chopped spinach, and green onion. After your bread is toasted go ahead and butter the slices of bread before adding the tofu scramble to it.
