Cheddar & Broccoli Twice Baked Potato

Evan has been wanting a baked potato for a few days and I follow a woman on Instagram who recently made a cheddar and broccoli twice baked potato and it looked absolutely amazing! So, I took it upon myself to attempt to make my own! I think it actually turned out pretty good.

Ingredients:

4 Large Potatoes

1 C Vegan Cheddar Cheese

3 Tbsp Vegan Butter

1/3 C Unsweetened Almond Milk

2 Green Onions

1/3 C Coconut Bacon

Salt & Pepper To Taste

1 Package Frozen Broccoli

3 Tbsp Vegan Sour Scream

2 Tbsp Olive Oil

Directions:

Preheat the oven to 450F degrees. While the oven is preheating, scrub and rinse the potatoes. Stab holes into each potato with a fork and rub the olive oil, salt, and pepper onto them. Wrap each one in their own foil.

Cook the potatoes for about an hour and 15 minutes or until soft.

Cook the frozen broccoli according the directions on the bag.

Once the potatoes are soft enough cut them down the middle and scoop out the potato filling into a large bowl. Add the vegan butter, broccoli, half of the cheddar cheese, almond milk, and salt & pepper into the bowl as well. Use a hand mixture to mix it for about 1 minute or until everything is combined.

Add the filling mixture back into the potatoes and add the rest of the cheddar cheese on top of them. Cook for another 10-15 minutes or until the cheese is melted. Top with the sour scream, green onion, and coconut bacon and enjoy!

    Looks so good! I wish I could taste one. Where do you buy all the vegan products? I’m always scared it’ll taste weird .

    1. I normally buy them from Whole Foods! They are a tiny bit expensive but we don’t currently have a lot of stores that offer vegan products other than Gardein. I will say some vegan products that are my favorite are normally from Gardein, Followyourheart, and So Delicious! 🙂
