Vegan Apple Cobbler

Evan and I recently went apple picking and of course we had to make an apple cobbler. I’ve never made a vegan apple cobbler before, so this was my first time. I made a yummy blueberry cobbler last year, so I just took that recipe and added apples instead of blueberries.

Add melted butter to the baking dish.

In a large mixing bowl, add apples, brown sugar, and the cinnamon sugar and mix together.Β In another bowl, add the flour and sugar and whisk together. Add the almond milk and vanilla extract and whisk until smooth. Add baking powder and mix.

Top with the coconut milk cool whip!

Ingredients:

6 Apples peeled and cut into slices

2 Tbsp of cinnamon sugar mix

1/3 C Light Brown Sugar

1 1/2 C Cane Sugar

2 C All Purpose Flour

1/2 C Melted Butter (I use Earth Balance)

1 3/4 C Almond Milk (Make sure it is unsweetened original)

1 Tbsp Vanilla Extract

3 Tsp Baking Powder

Optional:

Coconut Milk Cool Whip (Highly recommend if you can find it in your store, it’s by So Delicious!)

Directions:

Preheat the oven to 325 F. Peel, rinse, and chop apples into slices. In a large mixing bowl, add apples, brown sugar, and the cinnamon sugar and mix together. Set aside.

In another bowl, add the flour and sugar and whisk together. Add the almond milk and vanilla extract and whisk until smooth. Add baking powder and mix.

Melt butter in a microwave safe bowl and add to the bottom of the 9 x 13 baking dish. Then add the flour mixture on top of the butter and don’t stir or mix it. Then top with the sliced apples.

Bake for 45 minutes, top with the coconut cool whip and enjoy!
