Cast Iron Baked Mac & Cheese

One of the easiest dishes that I like to make is baked macaroni and cheese. I’m not talking about that store bought Mac and cheese. I’m talking about that homemade baked macaroni and cheese. Nothing beats a homemade cheese sauce, but when it’s vegan, it’s even better. This is a super easy recipe and you can’t go wrong with it. Evan had been craving hush puppies for days, so I cooked up some vegan hush puppies and served it with some apple honey and this baked Mac and cheese! Side note, if you’ve never had apple honey, go get some from amazon ASAP, because you won’t be disappointed.

On medium heat, add butter to your cast iron skillet and melt.

Once the butter is melted, add flour and whisk for about 1-2 minutes.

Slowly whisk in the milk until all clumps have disappeared. Allow this mixture to cook for about 8 minutes or until the sauce becomes thick.

Ingredients:

1 Box Elbow Macaroni

1 C Vegan Cheese (I use So Delicious)

3 Tbsp Vegan Butter (I use Earth Balance)

3 Tbsp All-Purpose Flour

2 C Unsweetened Original Almond Milk (Any dairy free milk is fine)

1/2 C Nutritional Yeast

1 Tsp Cayenne Pepper

1 Tsp Dried Basil

1 Tsp Parsley

1 C Bread Crumbs

Salt & Pepper to taste

Non-Stick Cooking Spray

Directions:

Preheat oven to 400 F. Bring pasta water to a boil and add macaroni. Follow the directions on the back of your macaroni box, but it should only take about 10 minutes.

While the pasta is cooking, on medium heat, add butter to your cast iron skillet and melt. Once the butter is melted, add flour and whisk for about 1-2 minutes.

Slowly whisk in the milk until all clumps have disappeared. Allow this mixture to cook for about 8 minutes or until the sauce becomes thick.

Once the mixture has become thick, add in all the spices and cheese and mix.

Drain pasta and add the cheese to the cooked macaroni. Spray your cast iron skillet with a little bit of non-stick spray and transfer the pasta into the skillet. Add bread crumbs on top and cook for about 15-20 minutes. Enjoy!
