Taco Salad

Taco salad is one of the easiest meals to make. It takes about 10-15 minutes tops and then you have yourself a delicious meal! I like to eat this either for a quick dinner or a really easy lunch during the work week.

Ingredients:

1 Package vegan beefless grounds(I use Yves)

1 Avocado

1/4 C chopped onion

2 Tbsp Olive Oil

1/4 C lettuce

Handful of grape tomatoes

Vegan Shredded Cheese (I use So Delicious)

2 Tbsp Vegan Sour Cream (I use Followyourheart)

Half a package of taco seasoning

Hot sauce of your choice (I use Cholula Chili & Garlic Hot Sauce)

Directions:

Warm up 2 Tbsp olive oil in a skillet over medium heat. Add beefless grounds to the skillet and cook until browned. Add taco seasoning and 1/4 C water.

While the beefless grounds are cooking, chop up lettuce, onion, tomatoes, and avocado.

Add beef to a plate, top with onion, tomatoes, lettuce, cheese, sour cream, cheese, avocado, and hot sauce.

Side Note:

These are really good with multi-grain scoops or corn tortillas!
