Vegan Meatball Subs

This is one of the quickest dinners I made this week. It’s super quick if you don’t want to make everything homemade. I’ve made this recipe with homemade marinara sauce and vegan meatballs before, but sometimes you just want to throw it all together as fast as you can. This is my lazy version of vegan meatball subs! I might make this from scratch and post that recipe! Let me know if that’s something you guys would want to see!

Ingredients:

1 Package Meatless Meatballs from Gardein (If you can find smaller ones that would work a lot better)

1 Jar Marinara

1 Package of sub sandwich bread

4 slices Chao cheese

1 Tbsp Basil

1 Tbsp Garlic Powder

1 Tbsp Olive oil

Directions:

Set your oven to the broil setting. Add the olive oil to the skillet over medium heat. Add meatballs and cook until browned. Cut the meatballs in half, add the jar of marinara sauce, garlic powder and basil. Allow this to simmer for about 10 minutes.

Cut your sub sandwich bread into halves. Don’t cut all the way through. Add meatballs and sauce into the sandwich bread and top with slices of cheese.

Put sandwiches under the broiler for about 45 seconds. Keep an eye on it because it can burn very quickly! Enjoy! 🙂
