One of the easiest recipes that I have come up with is a potato salad. Which happens to be one of my favorite foods! Who doesn’t love potatoes? This is probably one of my quickest recipes since it only takes about 10-15 minutes. Enjoy!
5 Medium sized potatoes
1 C Vegan mayo (I use JUST by Hampton Creek)
1/4 C Yellow mustard (Whole grain mustard is really good in this but we didn’t have any)
2 Tbsp dried chives
2 Tbsp Paprika
3 Tbsp Garlic Powder
2 Tbsp nutritional yeast
2 Tbsp Apple cider vinegar
3 Tbsp Pickle relish
Salt & pepper to taste
1 Celery stalk
Boil a large pot of water. Peel, rinse, and chop the potatoes into bite size pieces and add them into the water.
Chop up the celery stalk into tiny pieces and in a large mixing bowl, add all the ingredients together except for 1 Tbsp of dried chives. Once the potatoes are done, strain them and add them into the mixing bowl as well. Top with the remaining Tbsp of dried chives and enjoy!
Side note: This can feed up to 4-5 people. Also, the way to know if the potatoes are done is to poke the potato with a fork and if it easily slides into the potato they’re finished!
