Breakfast for Dinner

Last night we were really craving some breakfast for dinner. So, naturally I decided to make some biscuits & gravy, loaded cheesy hash browns and some yummy bacon. The biscuits aren’t homemade because we had a few cans of biscuits in our refrigerator that we needed to use, but I do have a homemade biscuits recipe that I’ve posted before! I’m also going to be making some cheesy chive biscuits for Thanksgiving, so keep an eye out for that coming up either this week or the beginning of next!Β 

Biscuits & Gravy Ingredients:

1 Can vegan biscuits

4 Tbsp vegan butter (I use Earthbalance)

4 Tbsp flour

3 C Almond milk

Salt & pepper to taste

Hash brownΒ Ingredients:

4 Medium sized potatoes

2 Tbsp avocado oil

1/4 C Red onion

1/4 C Bell pepper

1/2 of a small tomato

2-3 Mushrooms

1 Green onion

1/4 C Vegan cheese (I use So Delicious)

2 Tbsp Dried chives

2 Tbsp Garlic Powder

1 Tbsp Paprika

Salt & pepper to taste

Other ingredients:

Greens of your choice

1 Avocado

Vegan Bacon of your choice (I use Light Life)

1 Tbsp Avocado oil

Instructions:

A few hours before doing any of the cooking go ahead and peel the potatoes. Shred them and put them in a large bowl of water and allow them to sit for 2-3 hours.

Follow the instructions on the biscuit package and cook as directed.Β  Rinse and dry the potatoes you peeled and shredded earlier in the day and set aside.

Warm 2 tbsp of avocado oil into a cast iron skillet over medium heat. Chop the onion, mushrooms and bell pepper into small bite sized pieces and add to the skillet. Cook until fragrant. Add the potatoes & remaining spices into the skillet and mix. Cook on each side for about 5-6 minutes or until golden brown & crispy. After you’ve flipped the hash browns, add the cheese and cover for about 2-3 minutes or until melted.

While the potatoes are cooking start on the gravy. Add the butter in a large pot and melt. Add flour and salt & pepper and whisk until combined. Allow this to cook for about 3-4 minutes. Slowly whisk in the milk and continue to whisk until it becomes a thick gravy consistency. Add more salt & pepper as you go if needed.

While the gravy cooks add the remaining avocado oil into a small skillet and cook bacon as directed.

Put some greens on your plate and top with hash browns. Chop up the green onion and place it on the hash browns. Tear up the biscuits and top with gravy and more freshly cracked black pepper. Slice up the avocado and place on or next to the hash browns and enjoy!

This is a very hearty and filling meal, so be prepared to feel nice and full afterwards!
